WE USE TRADITIONAL TECHNIQUES, HAND MOULDING OUR LOAVES & PROVING THEM IN FLOURED BASKETS. BAKING THEM DIRECTLY ON THE OVEN FLOor TO HELP create A DELICIOUS CRUST. WE INVEST TIME AND SKILL TO produce REAL, HONEST BREAD THAT SMELLS, LOOKS AND TASTES AMAZING.
Real bread takes time.
This is something that cannot be substituted. We follow the ethos and methods of past bakers, opting to use 3 main ingredients to make our bread - Flour, Water & Salt. We have found that allowing the organic grains to ferment with water over a long period of time produces incredible results. All our breads are free from chemical additives & improvers. we are always working towards the perfect loaf.

we believe in doing a few things, but doing them exceptionally well. We don’t offer dozens of different types of breads or cake varieties, just a few that we think are delicious and we hope that you will think so too.

Meet Dara & Ciara
we have been fortunate enough to travel & live in New Zealand and whilst there we discovered a new passion for fresh, locally produced food in tune with the seasons. returning home and struggling to find real bread on the North Coast, we turned our hand to making our own. Very quickly our friends and family would be disappointed if we visited with nothing freshly baked for them. REALISING WE WERE NOT ALONE IN OUR SEARCH FOR REAL BREAD AND DELICIOUS SWEET BAKES, URSA MINOR WAS BORN.
We are self taught bakers, our unique style comes from a mixture of old and new. We take inspiration from traditional recipes and techniques but also CONTINUALLY RESEARCH NEW IDEAS AND EXPERIMENT WITH DIFFERENT, exciting FLAVOURS.
Over the past year we have worked with fantastic cafés who share our passion and ethos for slow, locally produced, organic food. we have been overwhelmed by the support we have gained fWe love the North Coast and are extremely excited to be one of the many fantastic food producers working hard to showcase and develop a culture of quality food. We strongly believe that you should do what you love and thankfully we get to do that everyday.
We love being able to share our story with everyone we meet, Ursa Minor is only beginning and from here the future looks great!
